Amaranth - Callaloo (Seeds)

Callaloo Amaranth is a versatile leafy green widely grown throughout the Caribbean and traditionally used in the dish known as callaloo. The tender young leaves can be cooked much like spinach and are delicious in a wide variety of savoury dishes.
Plants are typically harvested while still young, at around 30 cm (12") tall, when the leaves are at their most tender. Callaloo Amaranth also makes an excellent choice for microgreens.
If left to mature, the plants develop elegant, cascading flower clusters. Both the flowers and seeds are edible as well, although the striking blooms also make an attractive addition to floral arrangements.
